  • Butter softened 175g
  • Sugar ¾ cup
  • Eggs 3
  • PAPAYA peeled,seeded and mashed with fork 300-350g
  • Flour ¼ cup
  • Vanilla ½ teaspoon


  • - Preheat oven to 170°C
  • - Cream butter and sugar
  • - Add eggs and vanilla and beat until blended
  • - Add papaya and mix again - the mixture will look curdled at this point,dont let that bother you,it will all come together in the next step
  • - Fold in the flour already mixed with baking powder,then mix together.Please don't over mix
  • - Pour into a lined 20cm round cake pan or in a loaf tin and bake for 45 minutes or until the cake comes away from the sides and a skewer struck in the middle of the cake comes out clean
  • - Leave in the tin for about 10 minutes to cool,then turn unto a wire rack to cool
  • - Dust with icing sugar or cream to serve
