Hello , Welcome to The Jossy Kitchen blog, today I will be guiding you on how to prepare one of Nigerian/African Favourite delicacy called edikaikong Soup.
This delicacy is popular and deep rooted with the calabar/akwaibom people of Nigeria. it is very nutritious
INGREDIENTS
• CHOPPED WATER LEAF
• CHOPPED UGWU (PUMPKIN LEAF)
KPOMO
• OFFALS(SHAKI,ETC)OPTIONAL
• ONIONS
• PALM OIL
• PERIWINKLES
• PEPPER(FRESH OR GRINDED)
• SEASONINGS(MAGGI,SALT,ETC)
• SHRIMPS(FRESH,DRIED OR FRIED)
PREPARATION
1.) WASH,SEASON MEAT WITH SALT,MAGGI,ONIONS,CURRY,PEPPER. COOK UNTIL TENDER AND JUST A LITTLE WATER IS LEFT IN D POT.
2.) THEN U CAN ADD UR CRAYFISH, PALM OIL,STOCKFISH,PEPPER,ONIONS,PERIWINKLES,SHRIMPS THEN STIR,COVER POT,THEN ALLOW TO BOIL FOR ABOUT 3 - 5 MINUTES.
3.) AFTER ABOUT 3 - 5 MINUTES,ADD THE CHOPPED WATER LEAF,STIR,COVER IT AND ALLOW TO COOK FOR ABOUT TWO (2) MINUTES.
4.) ADD THE UGWU (PUMPKIN LEAF), THEN ADD UR GRINDED CAMERON PEPPER(THOUGH IT'S OPTIONAL,IT'S BEING ADDED JUST FOR D SCENT). STIR,AND COVER D POT AND ALLOW TO COOK FOR TWO MINUTES.
5.) CHECK THE SEASONING,ADD MORE IF IT'S NOT SUFFICIENT. PLS DON'T ADD WATER,STIR AND ALLOW TO SIMMER FOR ONE MINUTE.
6.) THEN U CAN STEP IT DOWN,YOUR EDIKANIKONG SOUP IS READY.
Note:It is advisable to wash the leaves thoroughly before slicing,so u don't wash off d nutrients after slicing
