RECIPE
• 400g cooking apple
• 150g frying batter
• Vegetable oil
• Flour
METHOD
• Peel and core the apples and cut into rings
• Pass through flour
• Shake off the surplus
• Deep into the frying batter
• Lift out with the fingers into fairly hot deep fat
• Cook for about five minutes on each side
• Drain well on kitchen paper,dust with icing sugar and glaze under the Salamanda
• Serve with hot apricot sauce.
