PINK PAPAYA CAKE
Recipe
- Butter softened 175g
- Sugar ¾ cup
- Eggs 3
- PAPAYA peeled,seeded and mashed with fork 300-350g
- Flour ¼ cup
- Vanilla ½ teaspoon
METHOD
- - Preheat oven to 170°C
- - Cream butter and sugar
- - Add eggs and vanilla and beat until blended
- - Add papaya and mix again - the mixture will look curdled at this point,dont let that bother you,it will all come together in the next step
- - Fold in the flour already mixed with baking powder,then mix together.Please don't over mix
- - Pour into a lined 20cm round cake pan or in a loaf tin and bake for 45 minutes or until the cake comes away from the sides and a skewer struck in the middle of the cake comes out clean
- - Leave in the tin for about 10 minutes to cool,then turn unto a wire rack to cool
- - Dust with icing sugar or cream to serve
